· Snow Fungus (Tremella) — Known as the “poor man’s bird’s nest.” Rich in plant-based gelatin and polysaccharides—often called nature’s hyaluronic acid. Deeply hydrates skin, nourishes the lungs, replenishes moisture, and promotes radiant, youthful skin. Cooling and skin-nourishing; may support skin elasticity and soothe a dry throat.
· Coix Seed (Job’s Tears) — Drains dampness, strengthens the spleen, reduces edema and puffiness. Helps with water retention, swelling, or a feeling of heaviness.
· Lotus Seed — Calms the mind (An Shen), promotes restful sleep, reduces internal heat, supports heart health, and strengthens digestion. Relieves restlessness and palpitations.

Precautions 

While generally gentle, it has specific contraindications — especially during pregnancy.

  • Avoid during acute colds, cough, loose stools / diarrhea.
  • Cold / Weak Constitution : Not suitable for those often feeling cold, having cold hands / feet or a cold stomach. Consume this soup with caution, as some ingredients are cooling.
  • Avoid during menstruation and pregnancy. Coix seed is relatively cold and cool in nature and can stimulate the uterus, so pregnant women should avoid it.
  • Contains fungus / mushroom (snow fungus / tremella and poria)
  • Blood-Thinning Medications : Snow fungus may have mild blood-thinning effects; consult a doctor if you are on anticoagulants.

Cooking Instructions

Mini Pack : 1-2 servings

1. (optional) Place Barley / Job’s tears (coix seed) in a dry pan over low heat (no oil!) and toast until lightly golden. This removes their cool nature and doubles the dampness-expelling effect
2. Soak the snow fungus separately for 30 minutes until softened. Pick out and rinse away any impurities, drain well. Remove the hard stem and tear or chop into tiny florets — the finer, the more gelatinous texture you’ll get!
3. Rinse all the ingredients and place them in a pot with 1000ml of water (adjust to your preference). Simmer gently over low heat for 30 minutes.  Bring to a boil over high heat, then reduce to low and simmer for 20-30 minutes – the fungus will start to release some gelatin and the broth will thicken slightly.
4. Stir in rock sugar to taste.   

 

Regular Pack : 3-4 servings

Optional
5. Turn off the heat, pour in the milk – optional (coconut milk or oat or almond or soy milk as substitute), cover to steep for 3 min and it’s ready to serve.

If you prefer it cold, let it cool, seal in a container, and chill in the fridge for 2 hours — it’s even more refreshing!

· Serve Hot : Soothing stomach, cooler days.
· Serve Chilled : Refreshment, hot summer days.
· Adjust the water amount to your liking – use less for a thicker, richer drink, or more for a lighter version.
· Rock sugar : Swap with brown sugar or honey or or omit entirely. Sweetness is totally adjustable!
· Diabetes or blood sugar control : Use stevia/monk fruit instead of rock sugar, or omit entirely.

· Add a splash of milk / oat / almond / soy or coconut milk for a richer flavour.

 

Optional – When Milk is Added for more creaminess, richness, extra protein, calcium, and skin-nourishing fats.

· Never boil the milk — just let it steep off-heat. No curdling, just ultra-creamy, silky perfection.
· Watching your calories? Use skim milk.
· For a richer flavor, use full-fat milk.
